PUMPING-OVER SYSTEM:
Comprising:
- TCD pump for pumping over grape must;
- ORD pumping-over sprayer for breaking up the “cap”;
- throttle valve on pump suction and delivery;
- pumping-over pipe of suitable diameter (same as ORD or greater).
N.B. For pumping over to be carried out properly, the components must be of the correct size for
the fermentation vessel (diameter and capacity).
